Since you insist on trying to sustain only on gruel, here is a new recipe to try.  


Going to start posting recipes we should make when we have the chance again. 


Roasted Chickpea Fajitas

Yield: Serves 4-6

Cook Time: 35-40 minutes


Onion, peppers, and mushrooms are sautéed and served with spicy roasted chickpeas to create these healthy and delicious vegetarian fajitas. Garnish with diced tomatoes, avocado slices, and a dollop of Greek yogurt, if desired.


To make the Roasted Chickpeas:

2 teaspoons chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 1/2 teaspoon ground cumin
1 teaspoon sea salt
1 tablespoon fresh lime juice
2 tablespoons water
1 (15 oz.) can of chickpeas, drained and rinsed

For the Fajitas:
1 tablespoon olive oil
1 onion, sliced
1 clove garlic, minced
3 bell peppers (any color), sliced (I used yellow, green, and orange)
8 ounces sliced mushrooms
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon oregano
Salt and pepper, to taste
Juice of 1 large lime
1/3 cup chopped cilantro

For serving:
Flour tortillas
Diced tomatoes
Avocado slices
Plain Greek yogurt (I used Chobani) or sour cream
Lime wedges


1. To roast the chickpeas: preheat oven to 400 degrees. In a medium bowl, combine chili powder, garlic powder, onion powder, cumin, salt, lime juice and water. Stir in chickpeas. Place seasoned chickpeas on a baking sheet that has been sprayed with cooking spray. Bake for 25-30 minutes, stirring once during cooking, until chickpeas are slightly crispy.

2. While the chickpeas are roasting, in a large skillet, heat oil over medium high heat. Add onions, garlic, peppers, and mushrooms. Cook for 5 minutes.

3. In a small bowl, combine chili powder, cumin, oregano, salt, pepper, and lime juice. Pour mixture over vegetables and cook for another 5 minutes, or until vegetables are tender. Stir in the roasted chickpeas and fresh cilantro.

4. Spoon roasted chickpea and vegetable mixture evenly down the centers of warm tortillas, and garnish with tomatoes, avocado slices, and Greek yogurt. Roll up tortillas, and serve immediately.

Haven`t gotten any since you have been gone, Emmy.  Just a head`s up that I really think you`re really fine and I would love to see what you look like naked again.



The porch season is closing fast, Emmy.  Another week or two and it will be done for another year.  I was thinking today how we must have drove by our place dozens of times before we moved in, waiting until that porch on the third floor was finally ours. Living in the moment you don`t think about it as much but in reflecting more on our relationship since you have been gone, we did move fast in some ways. I don`t think it was more than a year before we decided to live together but I never had one apprehensive thought about us moving in together.  I remember the day we moved in like yesterday because we got the keys at almost the exact time as Caycie was leaving for Toronto – which in itself feels like forever.  I`ll always have memories of being surrounded by boxes of books in the living room, just watching you unpack, and not even believing that it was finally happening.  We were both so excited to move in, we must have unpacked in a day.  That first night together you had fallen asleep first and I must have spent an hour just watching you against the moonlight.  My mind was racing some, but I was mostly thinking how fortunate I was to be there with you.  I still feel like that so far away.  I`m trying hard to be more positive about everything since you`have be gone.  Trying to look forward to future memories, like our first night together after months apart, when I can finally just spoon you again.
